Red bell peppers also have high amounts of vitamin C and lycopene, which is another powerful antioxidant. Green bell peppers also have large amounts of antioxidants, and they contain zeaxanthin, which improves your eyesight and keeps your eyes healthy. Enjoy these peppers chopped up and dipped in hummus or another low-fat dip. Or, for a bit of protein, bake stuffed bell peppers with brown rice and lean ground beef or chicken.
